Job Description
The Sous Chef will work with the Senior Chef, Senior Camp Manager, Camp Manager, and Camp Coordinator, to ensure that all aspects of food service are followed and delivered to the contract requirement. The Sous Chef will be responsible for leading a team between 8 – 15 employees.
Key Responsibilities:
- Managing aspects of food delivery in designated kitchen
- Inventory management, product selection, and menu creation in collaboration with Managers and Chefs on site.
- Overseeing production of dinner service.
- Tasting all proteins, starches, soups, and sauces to ensure quality of food
- Working with kitchen team to lead them through production and service
- Management of one kitchen with oversight of up to 15 kitchen staff.
- Schedule creation and collaboration with Camp Manager
- Liaising with clients and guests to ensure food quality
- Participation in FTQ360 Quality Assurance Program.
- Training, developing, and working with sous chefs, first cooks, and kitchen support assistants
- Working with Chefs, Manager, and District Manager to develop unique food service offerings and menu items.
- Following the food budget and menu as per the Executive Chef
Qualifications
- 10+ years of professional cooking experience
- Red Seal designation or equivalent experience.
- 3 – 5 years in a Chef leadership position
- Remote camp or high-volume catering experience
- Exceptional oral and written communication skills
- Valid Advanced Food Safety certificate
- Valid First Aid Certification
- Working knowledge of Microsoft Office Suite (Office365, SharePoint, Excel, etc.)
- Must have an acceptable Criminal Records Check
- Education in Food and Beverage or Hospitality Management considered an asset
Additional Information
Work Schedule and Compenstation
The Sous Chef works a rotational schedule of 14 days on 14 days off. Travel is provided from point of dispatch locations: Timmins, ON or Sudbury, ON.
The Sous Chef is paid on a daily rate between $300 – $325 per day.
Benefits are available after 90-day probationary period and are 75% employer paid, 25% employee paid.
